If there’s one dessert flavor that instantly feels like summer, it’s s’mores.

S’mores Layer Cake
This chocolate layer cake is everything you love about a classic s’more in cake form.
Rich chocolate cake layers are frosted with a marshmallow graham cracker buttercream, finished with a decadent chocolate ganache drip, and topped with toasted marshmallows for the ultimate summer dessert.
It’s dramatic, nostalgic, and perfect for birthdays, graduations, or any celebration that calls for cake.
Marshmallow Graham Cracker Buttercream
Equipment
Ingredients
- 1 cup butter softened
- 1/2 cup shortening
- 7 cups powdered sugar
- 1 (7oz) jar marshmallow fluff
- 2 tsp vanilla extract
- 1/2 tsp almond extract (optional)
- 2-4 Tbsp heavy cream
- 1 cup finely crushed graham cracker crumbs
- pinch of salt
Instructions
- Beat the butter and shortening together for 3-4 minutes on your mixer with the paddle attachment.
- Add the marshmallow fluff and mix until fully incorporated.
- Gradually add the powdered sugar, one cup at a time.
- Add vanilla, almond extract and salt.
- Mix until smooth.
- Add heavy cream as needed until frosting reaches a fluffy, spreadable consistency.
- Fold in the graham cracker crumbs. Mix for another minute until everything is incorporated.

They’re easy to transport, easy to serve, and always disappear quickly.

Quick ganache (chocolate or white chocolate)
Ingredients
- 1/2 cup chocolate chips
- 1/2 cup heavy cream
Instructions
- Place the chocolate in a heatproof bowl.
- Heat the cream until just warm and steaming, not boiling! You can do this on the stove or in the microwave.
- Pour the warm cream over the chocolate and let it sit undisturbed for 2–3 minutes.
- Gently stir from the center outward until smooth and glossy.
- Let the ganache cool slightly before drizzling. It will thicken as it sits.
Notes
- For a thinner drizzle, use it while warm.
- For dipping cupcake tops, let it cool until slightly thickened but still fluid.
- If it thickens too much, gently rewarm in short bursts.
- White chocolate ganache works the same way, just swap in white chocolate chips.
Gooey Bakery-Style S’mores Cookies

Chocolate Smash Cookie Base
Equipment
- Cookie Sheet
Ingredients
- 1 box chocolate fudge cake mix (15.25 oz)
- 1/2 cup butter, melted
- 1/4 cup vegetable oil
- 2 eggs
- 1/4 cup buttermilk
- 1/4 cup cocoa powder
- 1/2 cup all-purpose flour
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350F and line your baking sheet with parchment paper.
- In your mixer, combine cake mix, cocoa powder, and flour.
- Add your melted butter, oil, eggs, buttermilk and vanilla. Mix until a thick dough forms
- (The dough should be thicker than brownie batter but softer than a traditional cookie dough)
- Using a cookie scoop, scoop large balls of dough. (About 1/4 cup per cookie)
- Before baking, use the bottom of your 1/4 cup measuring cup and press down on the center of the cookie (for a place for the frosting to sit).
- Bake for 10-12 minutes.
- Cool completely before frosting.
