sweet potatoes
(peeled and chopped)

ripe avocados
(diced))
cottage cheese

ground beef
salt and pepper
hot honey
(for drizzling)
ground coriander
Instructions
Peel and dice the sweet potatoes, and toss them with salt and pepper.
Roast at 400F for 25-30 minutes.
While the potatoes are roasting, start browning the beef. Season with salt and pepper.
Divide everything evenly between 4 bowls. Cottage cheese, beef, sweet potatoes and avocado.
Drizzle hot honey and a pinch of coriander (optional)
