How to make the viral protein bowl

I finally made the viral protein bowl that’s been floating around social media, and wow, it totally lived up to the hype. It’s one of those meals that sounds a little random at first (ground beef, sweet potatoes, cottage cheese, and avocado?), but somehow works perfectly together. It’s filling, packed with protein, and so easy to prep ahead.
I made my version last night after a quick trip to Trader Joe’s, and it was so good I had to share the details here.

The Viral Protein Bowl
Ingredients
- 2 sweet potatoes (peeled and chopped)
- 2 ripe avocados (diced))
- cottage cheese
- 1 lb ground beef
- salt and pepper
- hot honey (for drizzling)
- ground coriander
Instructions
- Peel and dice the sweet potatoes, and toss them with salt and pepper.
- Roast at 400F for 25-30 minutes.
- While the potatoes are roasting, start browning the beef. Season with salt and pepper.
- Divide everything evenly between 4 bowls. Cottage cheese, beef, sweet potatoes and avocado.
- Drizzle hot honey and a pinch of coriander (optional)
- Enjoy!
