Preheat oven to 350 degrees.
In a stand mixer, add melted butter and sugars. Mix for 1 minute on medium speed.
Add egg and vanilla. Mix until smooth.
In a separate bowl, mix flour, baking soda, baking powder and salt.
Pour in half of the dry ingredients into mixing bowl and mix to combine. Using a spatula, mix in remaining dry ingredients. Fold in chopped chocolate bars until all dry ingredients and chocolate are mixed together. Try not to over mix.
Using a small cookie scoop, scoop 15 cookies onto parchment paper placed on a baking sheet. Bake for 10 minutes or until edges are slightly darkened.
Removed from oven and sprinkle each cookie with sea salt.
