Chewy Birthday Cake Sprinkle Cookies
If fun had a flavor, I think it would taste like birthday cake.
These Birthday Cake Sprinkle Cookies are soft, chewy, buttery, and packed with colorful sprinkles in every bite. I use a little birthday cake flavoring from Amoretti to give them that nostalgic bakery-style birthday cake flavor that reminds me of cake batter, frosting, and childhood birthday parties.
Unlike thick bakery cookies, these bake up a little flatter with perfectly crisp edges and soft, chewy centers. They’re the kind of cookie you keep reaching for “just one more” of.
Whether you’re baking for a birthday, baby shower, graduation, or simply because you need a colorful dessert, these cookies always bring a little extra happiness to the table.

Why You’ll Love These Cookies
What Gives Them Their Birthday Cake Flavor?
The secret ingredient is Amoretti Birthday Cake Flavoring.
Just a small amount gives these cookies that unmistakable birthday cake flavor without making them overly sweet. It has hints of vanilla, butter, and cake batter that make these taste like they came straight from a bakery.
If you don’t have birthday cake flavoring, you can substitute a combination of vanilla and butter extract, but the Amoretti flavoring gives these cookies their signature taste.

The Secret to Soft & Chewy Cookies
These cookies are intentionally a little flatter than thick bakery-style cookies.
The thinner shape gives them slightly crisp edges while keeping the centers perfectly soft and chewy.
A few things help create that texture:
That little bit of patience makes all the difference.

Why I Add Sprinkles Before Baking
Instead of rolling the dough in sprinkles afterward, I gently press extra rainbow sprinkles onto the tops of the cookie dough before baking.
It keeps the colors bright, creates a bakery-style finish, and ensures every cookie looks festive without any extra decorating.
It’s one of my favorite tricks for making simple cookies feel a little more special.

Equipment
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 2 large eggs room temperature
- 2 teaspoons vanilla extract

- 2 tablespoons cornstarch
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3/4 teaspoon kosher salt
- 1 cup rainbow jimmies sprinkles plus more for topping
- 1/2 cup white chocolate chips optional
Instructions
- In the bowl of a stand mixer fitted with the paddle attachment, cream the butter, granulated sugar, and brown sugar on medium speed for 3–4 minutes until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the vanilla extract and Amoretti Birthday Cake Flavoring.
- In a separate bowl, whisk together the flour, cornstarch, baking soda, baking powder, and salt.
- Slowly add the dry ingredients to the butter mixture, mixing just until combined. Avoid overmixing.
- Fold in the rainbow jimmies and white chocolate chips, if using.
- Cover and chill the dough for at least 30 minutes.
- Preheat your oven to 350°F. Line baking sheets with parchment paper.
- Scoop the dough using a large cookie scoop (about 3 tablespoons each) and place the dough balls about 3 inches apart.
- Gently flatten each dough ball just slightly with your palm. Press a few extra sprinkles onto the tops.
- Bake for 10–12 minutes, until the edges are lightly golden but the centers still look slightly underdone.
- As soon as the cookies come out of the oven, use a large round cookie cutter or drinking glass to gently swirl around each cookie to create perfectly round edges.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack.
Fun Ways to Customize Them
One of my favorite things about these cookies is how easy they are to customize.
Try changing the sprinkle colors for different occasions:
Birthday Parties
Baby Showers
Pink, blue, or neutral pastel sprinkles
Valentine’s Day
Easter
Fourth of July
Halloween
Orange, purple, black, and green
Christmas
Graduation
School colors
One simple change makes them feel completely new.

Storage
Store the cookies in an airtight container.
Room Temperature: Up to 5 days
