The Cutest White Pumpkin Cake

If there was ever a cake made for fall, this is it!

This Pumpkin Shaped Cake starts with soft pumpkin cake layers filled with cream cheese filling and covered in vanilla buttercream. The outside is decorated with simple lines running up the sides to make the entire cake look like a pumpkin, complete with a little stem on top.

It’s such a fun cake for fall parties, Halloween or Thanksgiving, and despite how impressive it looks on the table, you don’t need complicated cake decorating skills to recreate it.

The pumpkin flavor paired with cream cheese filling gives you all those classic fall flavors on the inside, while the vanilla buttercream on the outside makes it easy to create the pumpkin design.

The Perfect Cake for Fall

I love desserts that can double as part of the table decor, and this cake definitely does!

Once it’s frosted and decorated, it looks like a little pumpkin sitting right on the cake stand.

Inside you’ll find:

Pumpkin cake – Soft cake filled with plenty of pumpkin and warm fall flavor.

Cream cheese filling – A creamy, slightly tangy filling that pairs perfectly with pumpkin.

Vanilla buttercream – Smooth buttercream covers the outside of the cake and gives us the structure we need to create the pumpkin shape.

You could make this for a fall birthday, Halloween party, Friendsgiving or Thanksgiving dessert.

What You’ll Need

You’ll need three components to make this cake:

Pumpkin Cake

Use your favorite pumpkin cake recipe baked into round cake layers.

Make sure the cake layers are completely cool before assembling.

Cream Cheese Filling

For the center of the cake, you’ll need:

  • 8 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Vanilla Buttercream

For decorating the outside of the cake, use your favorite vanilla buttercream.

You’ll want enough to crumb coat and generously frost the entire cake.

You’ll also need orange gel food coloring if you’d like your pumpkin orange, but I love keeping it white.

For the pumpkin stem, you can use a small piece of fondant, modeling chocolate, a thick buttercream or another edible decoration that works with your finished design.

How to Make the Cream Cheese Filling

Add the softened cream cheese and butter to the bowl of a stand mixer fitted with the paddle attachment.

Beat until completely smooth and creamy.

Gradually add the sifted powdered sugar, mixing on low until incorporated.

Add the vanilla and a pinch of salt.

Increase the mixer speed and beat until the filling is smooth and fluffy.

If the filling feels especially soft, refrigerate it briefly before assembling the cake. You want it creamy enough to spread but sturdy enough to stay between the cake layers.

How to Assemble the Pumpkin Cake

Once your pumpkin cake layers have cooled completely, level the tops if necessary.

Place your first cake layer on a cake board or serving plate.

Pipe a border of vanilla buttercream around the outside edge of the cake layer. This creates a little dam that helps keep the softer cream cheese filling inside.

Add cream cheese filling to the center and spread it into an even layer.

Add the next pumpkin cake layer and repeat.

Finish with the final cake layer on top.

At this point, I like to chill the stacked cake for about 20–30 minutes before decorating. A cold cake is much easier to frost!

Crumb Coat the Cake

Cover the entire cake with a thin layer of vanilla buttercream.

This first layer doesn’t need to look pretty! The crumb coat simply traps loose cake crumbs so they don’t end up in your final frosting.

Refrigerate the cake for about 15–20 minutes, or until the buttercream feels firm.

How to Decorate a Cake Like a Pumpkin

Now for the fun part!

Tint your vanilla buttercream your desired shade of orange using gel food coloring.

Add a generous layer of orange buttercream over the chilled crumb coat.

Smooth the top and sides, but don’t worry about making everything perfectly flat. A pumpkin naturally has curves and texture, so this cake is actually very forgiving.

Create the Pumpkin Lines

Once the cake is covered, divide the cake visually into sections.

Starting at the bottom edge, create vertical lines running up the side of the cake and slightly inward toward the center of the top using your cake spatula.

Continue around the entire cake.

These don’t need to be perfectly identical. Slightly uneven sections can actually make the cake look more like a real pumpkin.

Depending on the look you’re going for, you can create the grooves with the edge of a small offset spatula, spoon or another cake-decorating tool.

The goal is to create those recognizable pumpkin ridges without removing too much buttercream.

Add the Pumpkin Stem

Every pumpkin needs a stem!

Add your stem to the center of the top of the cake after you’ve finished creating the ridges.

You can make an edible stem from fondant or modeling chocolate, or use another food-safe decorative option.

I used a thick buttercream to pipe the stem and added some texture with a cake spatula.

If you’d like, add a small buttercream leaf or vine around the stem for a little extra detail.

And that’s it!

Tips for Decorating a Pumpkin Cake

Chill Your Cake Between Steps

This is probably the biggest thing that will make decorating easier.

Chilling after stacking and again after crumb coating gives you a sturdy cake to work with.

Use Gel Food Coloring

Gel coloring gives you a rich orange without adding too much liquid to your buttercream.

Start with a small amount. You can always add more!

Don’t Try to Make It Perfect

Pumpkins aren’t perfectly symmetrical.

Your ridges don’t need to be exactly the same size, and the buttercream doesn’t need to be perfectly smooth.

That’s part of what makes this design so approachable.

Keep Your Cream Cheese Filling Inside

Because cream cheese filling is softer than traditional buttercream, piping a vanilla buttercream dam around each cake layer helps keep the filling where it belongs.

Use Plenty of Buttercream

Don’t make your final buttercream layer too thin.

You need enough frosting on the cake to create visible grooves without scraping all the way down to the crumb coat.

Can I Make This Pumpkin Cake Ahead of Time?

Yes!

The cake layers can be baked ahead of time, cooled completely and wrapped tightly until you’re ready to assemble.

You can also prepare the vanilla buttercream ahead and refrigerate it. Allow it to soften slightly and rewhip before decorating.

Because this cake contains cream cheese filling, the assembled cake should be stored in the refrigerator.

For the easiest decorating, I’d bake the cake layers first and assemble and decorate the cake the day before you plan to serve it.

How to Store Pumpkin Cake

Store the finished pumpkin cake covered in the refrigerator because of the cream cheese filling.

For the best texture, remove the cake from the refrigerator before serving and allow it to lose some of its chill.

Don’t leave a cream-cheese-filled cake sitting at room temperature for extended periods.
