Super Moist Pumpkin Protein Bread
There’s something about pumpkin bread this time of year that I can’t resist. Especially when it’s incredibly moist, full of warm fall spices, and has that perfectly soft, tender center.
I’ve been wanting to create a pumpkin bread recipe with a little extra protein, but I had one requirement: it still had to taste like really good pumpkin bread.
I’ve tried enough protein baked goods to know they can sometimes be dry, dense, or have that unmistakable protein powder texture. That’s exactly what I wanted to avoid.
For this recipe, I’m using BetterDays Vanilla Protein, pumpkin purée, Greek yogurt, and a few simple pantry staples. The vanilla protein pairs naturally with the pumpkin and cinnamon, while the Greek yogurt and avocado oil help keep everything moist.
I also love adding oats and pumpkin seeds to the top. It gives the loaf that pretty bakery-style finish with a little texture in every bite.
Whether you’re enjoying a thick slice with your morning coffee, packing it for an afternoon snack, or serving it warm with a little butter, this is the kind of fall baking I love.

What Makes This Pumpkin Bread Different?
Extra protein. Two scoops of BetterDays Vanilla Protein, along with eggs and Greek yogurt, add protein without relying entirely on protein powder.
Made with real pumpkin. A full cup of pumpkin purée adds pumpkin flavor, natural moisture, and that beautiful fall color.
Simple ingredients. Nothing complicated here! Just pantry staples and a few ingredients you may already have in your refrigerator.
A pretty bakery-style topping. Rolled oats, pumpkin seeds, and a sprinkle of chia seeds make this loaf look just as good as it tastes.

Ingredients You’ll Need
Here’s what makes this pumpkin protein bread work:
Pumpkin Purée
Make sure you’re using 100% pure pumpkin purée, not pumpkin pie filling.
Pumpkin adds flavor, color and a lot of moisture to the loaf.
Vanilla Protein Powder
I developed this recipe using BetterDays Vanilla Protein.
Protein powders can behave very differently when baked, so I can’t guarantee the same texture with every brand.

Greek Yogurt
Full-fat plain Greek yogurt adds protein while also helping create a soft, tender crumb.
Avocado Oil
Don’t skip the oil!
It may be tempting to remove it when making a protein recipe, but that little bit of fat makes a big difference in keeping the bread moist.
Maple Syrup
Pure maple syrup sweetens the loaf and works beautifully with pumpkin and fall spices.
Pumpkin Pie Spice + Cinnamon
Pumpkin pie spice gives us that classic fall flavor, and I add a little extra cinnamon because you can never have too much cinnamon in pumpkin bread.
Oats, Pumpkin Seeds + Chia Seeds
These are sprinkled over the batter before baking for a pretty bakery-style finish and a little added texture.

Tips for Making Moist Pumpkin Protein Bread
Don’t overmix the batter. Once you add the dry ingredients, gently fold everything together until combined. Overmixing can create a tougher loaf.
Use full-fat Greek yogurt. The extra richness helps keep the bread soft and tender.
Keep the oil. It might be tempting to eliminate the oil when making a protein recipe, but it’s important for moisture and texture.
Watch your baking time. Every oven is different. Start checking your bread around 50 minutes, and remove it once the center is baked through.
Let it cool before slicing. Protein-enriched baked goods can be delicate while they’re hot. Cooling helps the crumb set.

Pumpkin Bread Topping Ideas
I love the simple oat and pumpkin seed topping, but you could change it depending on what you have.

Or leave the top completely plain!
How to Store Pumpkin Protein Bread
Once completely cooled, store the bread in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
You can also freeze individual slices for up to 3 months. Wrap each slice tightly and place them in a freezer-safe bag. Thaw at room temperature or warm gently before serving.
Super Moist Pumpkin Protein Bread Recipe
Ingredients
Wet Ingredients:
- 1 cup 240g pumpkin purée
- 2 large eggs
- 1/2 cup 120g full-fat plain Greek yogurt
- 1/3 cup 75g avocado oil
- 1/2 cup 160g pure maple syrup
- 1 teaspoon vanilla extract
Dry Ingredients:
- 1 cup 125g all-purpose flour
- 2 scoops approximately 62g BetterDays Vanilla Protein
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 1/2 teaspoons pumpkin pie spice
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
Topping:
- 2 tablespoons old-fashioned rolled oats
- 1 tablespoon pumpkin seeds
- 1 teaspoon chia seeds
- Optional: 1 teaspoon coarse sugar
Instructions
- Preheat oven to 350°F. Line a 9×5-inch loaf pan with parchment paper, leaving some overhang on the sides for easy removal.
- In a large mixing bowl, whisk together the pumpkin purée, eggs, Greek yogurt, avocado oil, maple syrup and vanilla until smooth.
- In a separate bowl, whisk together the flour, protein powder, baking soda, baking powder, pumpkin pie spice, cinnamon and salt.
- Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix. The batter should be thick but spreadable. If it seems unusually stiff, add 1–2 tablespoons of milk.
- Pour the batter into the prepared loaf pan and smooth the top.
- Sprinkle evenly with rolled oats, pumpkin seeds, chia seeds and optional coarse sugar.
- Bake for 55–70 minutes, checking around the 50-minute mark. If the top begins to brown too quickly, loosely cover the loaf with aluminum foil.
- The bread is done when a toothpick inserted into the center comes out without wet batter.
- Allow the bread to cool in the pan for 15 minutes before transferring it to a wire rack. Cool completely before slicing.
Notes
I love finding ways to add a little extra protein to foods we’re already making and enjoying.
Pumpkin bread doesn’t need to become some completely different “healthy” version of itself. I still want it to be soft, sweet, warmly spiced and something I’d actually look forward to eating.
This one checks all of those boxes.
