6 Easy Lunch Box Dessert Recipes for Back-To-School

Finding a homemade treat tucked inside your lunch box just makes the school day a little better, don’t you think?!

With back-to-school season here, I rounded up a few of my favorite lunch box dessert recipes that are easy to make, easy to pack, and perfect for prepping ahead. From fudgy brownies and classic Rice Krispie treats to mini oatmeal chocolate chip cookies, these are the kinds of treats both kids and adults are happy to find at lunchtime.

Make one recipe for the week or bake a few and stash extras in the freezer so you always have something ready to add to lunches.

When I’m choosing treats for school lunches, I want recipes that don’t require a fork, frosting that needs refrigeration, or a lot of assembly in the morning.

My fudgy brownies are rich, chocolatey, and easy to cut into smaller lunch box-sized squares. Bake a batch at the beginning of the week, slice them once they’re completely cooled, and you’ll have an easy homemade dessert ready to grab.

For school lunches, I like cutting them a little smaller than I would for a regular dessert. They’re plenty rich, and the smaller size fits perfectly into snack containers and bento boxes.

Lunch box tip: Wrap brownies individually so they stay soft and don’t make a mess inside the lunch container.

2. Rice Krispie Treats

Is there anything more nostalgic than a homemade Rice Krispie treat?

They’re one of my favorite desserts for school lunches because they’re incredibly easy to make, travel well, and don’t require any special storage.

You can keep them classic or dress them up with sprinkles, chocolate drizzle, or other fun mix-ins depending on the season.

Lunch box tip: Cut them into individual squares and wrap them tightly once they’re completely cool to keep them soft and chewy.

3. Chewy Birthday Cake Sprinkle Cookies

If you want to make opening a lunch box a little more fun, add sprinkles.

These chewy birthday cake sprinkle cookies are buttery, colorful, and filled with that nostalgic cake batter flavor. They’re also really easy to customize throughout the school year.

Use rainbow sprinkles for everyday lunches, school colors for spirit week, orange and black for Halloween, or red and green during Christmas.

It’s one cookie recipe you can bring back over and over again.

Lunch box tip: Freeze baked cookies and pull out what you need throughout the week. They’ll thaw by lunchtime.

4. Brain Break Bars

For the days when you want something that falls somewhere between a snack and a treat, make a batch of Brain Break Bars.

These homemade granola bars were practically made for busy school days. They’re easy to grab on the way out the door and work just as well tucked into a lunch box as they do waiting on the counter when everyone gets home from school.

Lunch box tip: Individually wrap the bars after slicing so they’re ready to grab during busy mornings.

Sometimes you need something a little more special.

These sugar cookie bars have all the buttery flavor of a classic sugar cookie without having to roll, cut, and decorate individual cookies. They’re topped with almond frosting and can easily be decorated with sprinkles for birthdays, holidays, or the first week of school.

Lunch box tip: Let the frosting set before packing, and place the bar in a small container instead of a bag to keep the frosting intact.

How to Prep Lunch Box Treats for the Week

You definitely don’t need to bake a new dessert every night.

Pick one or two recipes over the weekend and portion everything once it’s cooled. Keep enough out for the next few days and freeze the rest when the recipe freezes well.

Then instead of digging through the pantry every morning looking for something to add to lunches, you can simply grab a homemade treat and go.
