PB Bliss Chocolate Protein Cookies
Some of the best recipe inspiration comes from travel, and this one came straight from a bakery stop in Los Angeles. We tried a soft, chewy peanut butter oat cookie with dark chocolate and clean ingredients, and I couldn’t stop thinking about it once we got home. It had that perfect balance of sweet and salty, indulgent but still light, the kind of treat that feels like a dessert but also fits into a healthy routine.
So I set out to recreate a similar cookie at home, with simple, wholesome ingredients and an added boost of protein. These chocolate peanut butter protein cookies are made with almond flour, gluten-free oats, coconut sugar, maple syrup, dark chocolate, and chocolate protein powder for 40 grams of protein per batch. They’re naturally sweetened, gluten-free, and free from refined sugar and seed oils, perfect for an afternoon snack, post-workout bite, or healthier dessert.
The result is a soft, chewy, bakery-style cookie with rich peanut butter flavor, melty dark chocolate, and a hint of cinnamon, finished with a sprinkle of flaky sea salt. They taste like something you’d find at a wellness bakery in LA, but they’re easy to make at home and made with ingredients you can feel good about eating.

PB Bliss Chocolate Protein Cookies
Ingredients
- 1/2 cup natural creamy peanut butter
- 1/4 cup coconut sugar
- 3 Tbsp pure maple syrup
- 1/4 cup melted coconut oil
- 2 scoops BetterDays Chocolate Protein (40g protein total)
- 1/2 cup almond flour
- 1/2 cup gluten-free rolled oats
- 1 Tbsp tapioca flour
- 1/2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp Maldon salt plus more for sprinkling
- 1/2 cup chopped 70% dark chocolate
- 3 Tbsp vanilla almond milk
Instructions
- Pre heat oven to 350°F.
- In a bowl, mix peanut butter, coconut sugar, maple syrup, and melted coconut oil until smooth.
- Stir in protein powder, almond flour, oats, tapioca flour, baking powder, cinnamon, and salt.
- Add almond milk and mix until a thick, scoopable dough forms.
- Fold in chopped dark chocolate.
- Scoop dough using a small cookie scoop (you should get about 12 cookies).
- For flatter cookies, gently press each dough ball down before baking.
- Sprinkle lightly with Maldon salt.
- Bake 10–12 minutes, until edges are set but centers are still soft.
- Cool completely to set and get that perfect chewy texture.
