Super Protein Cookie Recipe
If you’ve ever wanted a protein treat hoping it would taste like dessert, these cookies are for you.
These super protein cookies are packed with fuel but still feel like a treat. They’re soft-baked, slightly sweet, and loaded with protein. There is protein powder, oats, almond butter (or peanut butter), and chocolate chips. They’re great for a quick breakfast, post-workout snack, or something to pack in your bag for busy days.
A few quick notes:
- The BetterDays BetterProtein is my favorite protein powder to use for this recipe.
- You’ll want to flatten the dough scoops down before baking or they will bake as a dome shape.
- Don’t skip the sea salt on top! It takes them from good to great.
- If your batter is dry, you can add extra pb!
- Want it a little chewier? Toss in some raisins, nuts, or unsweetened coconut for an extra kick.
The best part? You mix everything in one bowl and bake them in under 10 minutes. They make about 8 cookies, depending on size, and freeze like a dream.

Super Protein Cookies

- 2 eggs
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 tsp baking soda
- 1 cup oats (Bob's Red Mill Protein Oats for more protein)
- 4 scoops BetterProtein
- 1/3 cup almond butter (or regular peanut butter)
- 1/2 cup semi-sweet chocolate chips (I use Lily's sugar-free)
- 1 tsp salt flakes (for the batter) (plus more to sprinkle on top)
Instructions
- Combine all ingredients in mixer
- Use a cookie scoops to portion the dough onto a cookie sheet, and flatten them by hand.
- Bake 350 for 7 minutes
- Pull out of oven, and sprinkle with sea salt while still hot.
