Easy S’mores Bars (No Campfire Needed!)

If there’s one dessert that brings people together, it’s anything s’mores.

These S’mores Bars were one of the most-loved treats back when Dan and I hosted our Monday Night Lives during the early days of the pandemic. We’d bake them live, chat with everyone, and without fail, people would save the recipe the second that pan came out of the oven.

They’re nostalgic and so delicious with layers of buttery graham cracker, gooey chocolate, and toasted marshmallow that never get old.

And the best part? They’re just as fun to gift as they are to eat. I like to cut them into squares, package 4–5 in a little box, tie it up with twine, and surprise friends or neighbors with a sweet treat. They’re always a hit!

If you’ve never made s’mores in bar form, this is your sign. These are easy to make, perfect for sharing, and they never last long around here.

S’mores Bars

These s'mores bars have a soft cookie base topped with delicious melty marshmallow, Hersheys chocolate and graham crackers. This is such an easy summer dessert recipe!

Ingredients

  • 2/3 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 1/4 cup AP flour
  • 1 tsp baking soda
  • 2/3 tsp salt
  • 3/4 cup milk chocolate chips
  • 3/4 cup semi-sweet chocolate chips
  • 1 1/2 cup mini marshmallows (divided)
  • 3 large Hersheys bars (broken up)
  • 2 sleeves graham crackers (broken up for topping and crust)

Instructions

  • Preheat your oven to 375 F
  • Combine flour, baking soda and salt. Set aside.
  • Cream butter and both sugars together.
  • Add vanilla, and each egg one at a time.
  • Slowly add the flour mixture.
  • Fold in chocolate chips, and 1 cup of mini marshmallows.
  • Line a 13×18 cookie sheet with parchment paper and spray with oil.
  • On the lined sheet, line the bottom with graham crackers until the entire sheet is covered
  • Scoop the cookie dough on top of the graham crackers and spread evenly. This step doesn't have to be perfect because the cookie dough spreads as it bakes!
  • Bake for 5 minutes.
  • Take out of the oven, and press the Hersheys bar pieces, mini marshmallows and the rest of the graham crackers sporadically on top.
  • Bake an additional 8 minutes.
  • Let the bars cool, cut them and enjoy!
