The Best Churro-Inspired Cookie Recipe for Cinco de Mayo

When one of my Cookie Squad friends shared her grandma’s snickerdoodle cookie recipe with me, I knew it was something special. These “snickerdoodle” cookies can also be named “churro cookies” depending on the occasion, and once you fill them with a cinnamon buttercream they turn into a cookie you’ll be craving over and over. They’re cinnamon-sugar-dusted, filled with creamy cinnamon buttercream, and taste just as dreamy as they sound. With Cinco de Mayo around the corner, I thought it was the perfect time to bring a little family tradition to your kitchen.
They’re soft, a little messy, insanely addicting, and guaranteed to disappear fast if you bring them to a party. If you need a cookie for Cinco De Mayo, this is the one.

Churro Sandwich Cookies
Ingredients
Cookie Base
- 1 cup softened butter
- 1 1/2 cups granulated sugar
- 2 eggs
- 2 tsp vanilla extract
- 2 1/2 cups AP flour
- 2 Tbsp cornstarch
- 1 tsp cream of tartar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
Cinnamon Buttercream
- 1 cup softened butter
- 3 1/2 cups powdered sugar
- 2 tsp cinnamon
- 2 tsp vanilla extract
- 1-2 Tbsp milk or cream
- pinch of salt
Instructions
Cookie Base
- Preheat oven to 350F
- Cream together the butter and sugar until light and fluffy (5 minutes)
- Add eggs and vanilla
- Add dry ingredients and mix until just combined
- Scoop dough balls into a bowl of cinnamon sugar
- Refrigerate for 20-30 minutes
- Bake for 8-12 minutes depending on the size of your dough balls
- Let cookies cool completely before adding frosting to the center
Cinnamon Buttercream
- Cream softened butter until light in color
- Add powdered sugar, cinnamon, vanilla, pinch of salt and milk or cream until combined
Assemble Sandwiches
- Put cinnamon buttercream into a piping bag, or you can use a bowl and scoop.
- Place buttercream in the center of the bottom cookie
- Place the top cookie on top to create a sandwich cookie
- Roll edges in cinnamon sugar
