Easy Taco Soup Recipe

Fall is here!  Bring on all the cozy sweaters, fall colors, delicious treats and comfort food dinners!  One of my family’s favorite fall dinners is Taco Soup.  It’s the easiest recipe and always a crowd pleaser.  

 

Ingredients: 

1/2 chopped onion
tbsp oil 
can of corn o
package of ground beef or ground turkey 
can of pinto beans
can of black beans
(2) cans of diced tomatoes 
1 packet taco seasoning
salt & pepper to taste 
 
Optional Garnish:
cilantro
sour cream
shredded cheddar cheese
avocado
tortilla chips
 
Directions: 
  1. In a large pot over medium heat, warm the oil. Add onion and cook until soft, about 5 minutes.  Add ground beef or turkey and cook until no longer pink.
  2. Add beans, corn, diced tomatoes, and taco seasoning.  Don’t drain the cans, add the liquid!  Bring to a simmer and cook until all ingredients are heated through.
  3. Garnish with sour cream, shredded cheddar cheese, avocado slices and cilantro.  Serve with tortilla chips.  

Bonus idea: Add everything but the garnishes to a crockpot.  Cook for 4-6 hours and then enjoy!

  • 1 lb ground beef or ground turkey
  • 1 can pinto beans
  • 1 can black beans
  • 2 cans diced tomatoes
  • 1 pkg taco seasoning
  • salt & pepper to taste

Optional Garnish:

  • cilantro
  • sour cream
  • shredded cheddar cheese
  • avocado
  • tortilla chips
