Fall is here! Bring on all the cozy sweaters, fall colors, delicious treats and comfort food dinners! One of my family’s favorite fall dinners is Taco Soup. It’s the easiest recipe and always a crowd pleaser.
- In a large pot over medium heat, warm the oil. Add onion and cook until soft, about 5 minutes. Add ground beef or turkey and cook until no longer pink.
- Add beans, corn, diced tomatoes, and taco seasoning. Don’t drain the cans, add the liquid! Bring to a simmer and cook until all ingredients are heated through.
- Garnish with sour cream, shredded cheddar cheese, avocado slices and cilantro. Serve with tortilla chips.
Bonus idea: Add everything but the garnishes to a crockpot. Cook for 4-6 hours and then enjoy!
