Preheat your oven to 325°F and line a baking sheet with parchment paper.
In a food processor, pulse together the almonds, walnuts, and sunflower seeds until they’re coarsely chopped.
Transfer the chopped mixture to a large bowl and stir in the oats, flaxseed, chia seeds, and salt.
Add vanilla bean paste, maple syrup, and melted coconut oil. Mix well until everything is coated.
Spread the granola evenly onto the prepared baking sheet, pressing it down a little to help form clusters.
Bake for about 25 minutes, or until golden.
Let it cool completely, then break into chunks and enjoy!
