Vanilla Bean Maple Granola

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup raw almonds
  • 1 cup raw walnuts
  • 1/2 cup sunflower seeds
  • 2 tbsp ground flaxseed
  • 2 tbsp chia seeds
  • 1/2 tsp salt
  • 2 tsp vanilla bean paste
  • 1/3 cup pure maple syrup
  • 1/3 cup coconut oil

Instructions

  • Preheat your oven to 325°F and line a baking sheet with parchment paper.
  • In a food processor, pulse together the almonds, walnuts, and sunflower seeds until they’re coarsely chopped.
  • Transfer the chopped mixture to a large bowl and stir in the oats, flaxseed, chia seeds, and salt.
  • Add vanilla bean paste, maple syrup, and melted coconut oil. Mix well until everything is coated.
  • Spread the granola evenly onto the prepared baking sheet, pressing it down a little to help form clusters.
  • Bake for about 25 minutes, or until golden.
  • Let it cool completely, then break into chunks and enjoy!
