Pasta Salad:
- 1 pound bowtie pasta cooked al dente and cooled
- 8 ounces salami cut into bite-size pieces
- 1 pint cherry tomatoes halved
- 1 green bell pepper diced
- 1 cup mozzarella chunks
- 1 small can sliced black olives drained
- 1/4 to 1/2 cup diced red onion
- Shredded Parmesan for garnish
Dressing:
- 1 1/4 cups ranch dressing plus 1/4 to 1/2 cup more before serving
- Fresh cracked black pepper to taste
Cook the bowtie pasta according to package directions until al dente. Drain, rinse with cold water, and let cool completely.
In a large serving bowl, combine the cooled pasta, salami, cherry tomatoes, green bell pepper, mozzarella, black olives, and red onion.
Add 1 1/4 cups ranch dressing and season with fresh cracked black pepper. Toss until everything is evenly coated.
Cover and refrigerate for at least 2 hours, but overnight is even better.
Before serving, stir in an additional 1/4 to 1/2 cup ranch dressing to freshen up the salad, since the pasta will absorb some of the dressing as it chills.
Top generously with shredded Parmesan and serve cold.
