Ingredients

  • 5 cups chicken bone broth
  • 1/2 lb ground chicken
  • 1 medium yellow onion diced
  • 2 celery stalks diced
  • 1 medium carrot thinly sliced
  • 1 small zucchini chopped
  • 2 cloves garlic minced
  • 1/4 cup uncooked jasmine rice
  • 1 tbsp olive oil or butter
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1-2 tsp fresh lemon juice
  • 1-2 two green onion

Instructions

  • Heat olive oil in a medium soup pot over medium heat. Add the diced onion and celery and cook for about 3–4 minutes until softened and fragrant.
  • Add the ground chicken and cook until browned, breaking it apart with a spoon as it cooks (about 4–5 minutes).
  • Stir in the garlic, sliced carrot, and zucchini. Cook for 1–2 minutes to start softening the vegetables.
  • Stir in the uncooked rice, then pour in the bone broth. Add salt, pepper, and thyme.
  • Bring the soup to a gentle boil, then reduce heat and simmer for 18–20 minutes until the rice and carrots are tender.
  • Taste and adjust seasoning if needed. Stir in fresh lemon juice and garnish with green onion before serving.
