Instructions
Heat olive oil in a medium soup pot over medium heat. Add the diced onion and celery and cook for about 3–4 minutes until softened and fragrant.
Add the ground chicken and cook until browned, breaking it apart with a spoon as it cooks (about 4–5 minutes).
Stir in the garlic, sliced carrot, and zucchini. Cook for 1–2 minutes to start softening the vegetables.
Stir in the uncooked rice, then pour in the bone broth. Add salt, pepper, and thyme.
Bring the soup to a gentle boil, then reduce heat and simmer for 18–20 minutes until the rice and carrots are tender.
Taste and adjust seasoning if needed. Stir in fresh lemon juice and garnish with green onion before serving.
