Ginger Molasses Cookies

Ingredients

  • 3/4 cup butter softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 1 egg
  • 2 1/4 cups AP flour
  • 2 tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp salt

Instructions

  • In a bowl, whisk together flour, baking soda, cinnamon, cloves, ginger and salt.
  • Separate bowl or mixer, cream butter, white sugar and brown sugar together until light and fluffy (about 4-5 minutes).
  • Add egg and molasses. Mix well, about 2 minutes.
  • Slowly add the dry ingredients until a dough is formed.
  • Cover and refrigerate at least 2 hours.
  • Preheat oven to 350F
  • On a lined baking sheet, roll dough balls (about 1 inch) and roll in sugar and place them on the baking sheet 2 inches apart.
  • Bake 8-10 minutes until the cookies are cracked on the top.
