Preheat the oven to 365°F.
In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until smooth and fluffy.
Add the egg, vanilla, and almond extract (if using). Mix until well combined.
In a separate bowl, whisk together the flour, baking soda, salt, and oats.
Gradually add the dry ingredients to the wet mixture until just combined.
Stir in the chocolate chips.
Scoop dough onto a parchment-lined baking sheet.
Bake for 8 minutes, then carefully flatten each cookie slightly with the back of a spatula.
Return to the oven for 2 more minutes, or until the edges are golden brown and crisp.
Let cool on the baking sheet for a few minutes before transferring to a wire rack.
