Dan’s Chocolate Cake

Ingredients

  • 1 1/2 cups flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs room temperature
  • 1 cup buttermilk room temperature
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 1 tsp white vinegar
  • 1/2 cup hot coffee

Instructions

  • 1. Mix the dry ingredients
  • Whisk together flour, cocoa powder, salt, baking soda, and baking powder. Set aside.
  • 2. Mix the wet ingredients
  • In a larger bowl, whisk together the sugar and oil. Add the buttermilk, eggs, and vanilla. Whisk in the vinegar, then the hot coffee.
  • 3. Combine
  • Slowly fold the dry ingredients into the wet mixture. The batter won’t be completely smooth, and that’s perfectly fine.
  • 4. Bake
  • Divide the batter evenly between two 8-inch round pans.
  • Bake at 365°F for about 30 minutes, or until a toothpick comes out clean or with a few moist crumbs.
