Coconut Lime Cake Mix Cookies
Ingredients
Cookie Base
- 1 Box Vanilla Cake Mix
- 2 Eggs (room temp)
- 1/2 Cup Vegetable Oil
- 1 tsp Vanilla Bean Paste
- 1 tsp Lime Juice
Buttercream Frosting
- 1 Cup Softened Butter
- 3.5 Cups Powdered Sugar
- 1 tsp Coconut Extract
- 2 Tbsp Lime Juice
- 1 Cup Toasted Coconut
- Lime Zest (for garnish)
Instructions
Cookies
- Combine all ingredients and mix until a dough is formed
- Scoop the dough into balls and refrigerate for at least 30 minutes.
- Place each dough ball onto a lined baking sheet, about 2 inches apart
- Use the bottom of a glass or measuring cup to smash the dough down, creating a place for the frosting to go once baked and cooled.
- Bake at 350F for 8-10 minutes. Watch closely and take out of the oven once the edges start to turn golden brown.
- Let the cookies cool completely before icing.
Buttercream
- Cream softened butter in mixer until light and fluffy (about 5 minutes)
- Slowly add the powdered sugar, one cup at a time.
- Add all of the wet ingredients until combined
- Once your frosting is smooth, add toasted coconut.
- Assemble cookies by either piping on the frosting or you can use a spatula. Zest lime on the top and enjoy!
