Combine all ingredients and mix until a dough is formed
Scoop the dough into balls and refrigerate for at least 30 minutes.
Place each dough ball onto a lined baking sheet, about 2 inches apart
Use the bottom of a glass or measuring cup to smash the dough down, creating a place for the frosting to go once baked and cooled.
Bake at 350F for 8-10 minutes. Watch closely and take out of the oven once the edges start to turn golden brown.
Let the cookies cool completely before icing.
