Ingredients

Dry Ingredients

  • 1/2 cup all-purpose flour see swaps below
  • 1 scoop BetterDays Birthday Cake Protein Powder 20g protein
  • 1 tsp baking powder
  • pinch of salt

Wet Ingredients

For Texture (Don't Skip!)

  • 1-2 tbsp Greek yogurt

Mix-Ins

  • 1-2 tbsp rainbow sprinkles

Instructions

  • In a bowl, whisk together flour, protein powder, baking powder, and salt.
  • In a separate bowl, whisk egg, milk, vanilla, and melted butter.
  • Add wet ingredients to dry and mix until just combined. Do not overmix.
  • Fold in sprinkles
  • Let batter rest (important)
  • Let sit for 3–5 minutes to hydrate the protein powder and improve texture.
  • Heat a skillet over medium-low heat and cook pancakes in butter for 2–3 minutes per side, until golden and cooked through.
