Dry Ingredients
- 1/2 cup all-purpose flour see swaps below
- 1 scoop BetterDays Birthday Cake Protein Powder 20g protein
- 1 tsp baking powder
- pinch of salt

- 1-2 tbsp rainbow sprinkles
In a bowl, whisk together flour, protein powder, baking powder, and salt.
In a separate bowl, whisk egg, milk, vanilla, and melted butter.
Add wet ingredients to dry and mix until just combined. Do not overmix.
Fold in sprinkles
Let batter rest (important)
Let sit for 3–5 minutes to hydrate the protein powder and improve texture.
Heat a skillet over medium-low heat and cook pancakes in butter for 2–3 minutes per side, until golden and cooked through.
