There’s something about the first chilly fall evening that makes me ready to trade summer salads and grilled dinners for big pots of soup, warm bowls of chili and easy dinners straight from the oven.
But cozy fall dinners don’t have to mean spending hours in the kitchen.
I pulled together some of my favorite fall dinner recipes that are warm, filling and still realistic enough to make on a busy weeknight. Think homemade chili and cornbread, hearty soups, chicken meatballs and easy sheet pan fajitas.
Most of these recipes use simple ingredients, several make great leftovers, and there are plenty of options for those nights when you just want to put everything in one pot and call dinner done.

An Easy Fall Weeknight Dinner Formula
You also don’t need a completely new recipe every night.
When I’m trying to make weeknight dinners easier, I think about meals in a really simple way:
Protein + vegetable + something filling + sauce or seasoning
That might look like chicken meatballs + roasted vegetables + rice.
Or chicken + peppers + tortillas for fajitas.
And sometimes all four are already inside one pot of soup.
Keep a few easy proteins, frozen vegetables, broth, rice, pasta and tortillas around and you’ve already got the start of several dinners.
Make Fall Dinners Easier
A little prep can make a huge difference during a busy week, and it doesn’t have to mean spending your entire Sunday meal prepping.
Pick three or four dinners before grocery shopping.
Look for recipes that use overlapping ingredients so you aren’t buying an entirely different grocery list for every meal.
If you’re already chopping vegetables for one recipe, chop a few extra for another.
And whenever you’re making something that freezes well, consider doubling it.
