Cadbury Mini Egg Protein Balls
Mini Eggs are my favorite candy of all time. Nothing compares to that crisp shell and creamy chocolate center. I wait for them every single spring.
So obviously… I had to turn them into a protein ball.
And guess what, they’re ridiculous.
They’re chocolatey, lightly sweet, packed with protein, and dotted with crunchy Cadbury Mini Eggs for that nostalgic Easter flavor. They feel fun and seasonal but still filling enough to work as an afternoon pick-me-up, post-workout bite, or quick grab-and-go snack during busy weeks.

Cadbury Mini Egg Protein Balls
Ingredients
- 3 scoops BetterDays chocolate protein powder
- 1/2 cup Bob’s Red Mill Protein Oats
- 1/4 cup almond flour
- 1/3 cup creamy One Trick Pony peanut butter
- 2 tbsp maple syrup
- 2 tbsp oat milk
- 1/2 cup crushed Cadbury Mini Eggs
- 3/4 cup Hu dark chocolate chips
- 1 tsp coconut
Instructions
- Crush the Mini Eggs
- Place them in a zip-top bag and gently crush with a rolling pin. You want chunky pieces, not powder. The bigger pieces give the best crunch.
- In a bowl, mix the protein powder, protein oats, and almond flour.
- Add peanut butter, maple syrup, and oat milk. Stir until a thick dough forms.
- Gently mix in the crushed Mini Eggs.
- Roll into balls
- Scoop and roll into 12 balls. Place on a parchment-lined tray and freeze for 15–20 minutes until firm.
- Melt the Hu chocolate chips with coconut oil until smooth.
- Dip each ball, coating fully, and return to parchment.
- Sprinkle a few crushed mini eggs on the top of each protein ball.
- Refrigerate until the chocolate sets.
- Store in the fridge for the best texture.
