Easy No-Bake Mini Cake Bites Using Trader Joe’s Sheet Cake

No-bake, no-fuss, and seriously adorable.

If you’ve ever grabbed one of the mini sheet cakes from Trader Joe’s (the Chantilly Cream Vanilla Bean one is my personal favorite), here’s a fun little hack to dress it up! These mini cake bites take just a few minutes to put together and are perfect for baby showers, brunches, birthdays… or just because.

You can use any flavor sheet cake you like: chocolate, lemon, seasonal varieties. Choose your own cake adventure!

Mini Cake Bites from a Trader Joe’s Sheet Cake

Ingredients

  • 1 Trader Joe’s Mini Sheet Cake (I used Chantilly Cream Vanilla Bean)
  • Fresh blueberries
  • Trader Joe’s Mini Sheet Cake (I used Chantilly Cream Vanilla Bean)

Instructions

  • Unbox the cake and place it on a cutting board.
  • Use an angled spatula to gently smooth out the frosting.
  • Cut the cake into 12 even squares.
  • Top each square with 1–2 blueberries.
  • Add a little strawberry leaf (snipped from the top of a strawberry) next to each blueberry for a fun and fresh garnish.

Want to get creative? Try these other topping ideas:

  • Berry Flag (perfect for the 4th of July): Use blueberries in the corner of each square and cut up strawberries to form red stripes.
  • Lobster Cakes (for a coastal theme): Top each square with a fan of strawberry slices and use a blueberry or chocolate chip for the eye. It gives off a mini lobster vibe and is SO cute for summer parties.
  • Citrus Glow-Up: If you’re using a lemon cake, add a small slice of candied lemon or a piece of orange peel with a mint leaf.
  • Tropical Twist: On coconut cake, top each bite with a chunk of pineapple and a toasted coconut flake.
  • Chocolate Dream: Use raspberries and chocolate shavings or mini chocolate chips for a more decadent combo.

The best part? These take less than 10 minutes to make, but look like something from a fancy bakery. No baking required. Just slice, top, and serve.
