Beverly Hills Hotel McCarthy Salad Recipe

If you know me, you know I love a good salad, and during my recent stay at the Beverly Hills Hotel, I pretty much lived on their famous McCarthy Salad. Since coming home, I’ve been missing it, so I tracked down the recipe to make it myself  and share with you! 

This salad has been around for decades and was named after Neil McCarthy, a racehorse owner who used to frequent the hotel. It became a go-to dish at the Polo Lounge, where celebrities and regulars would order it on repeat. It’s easy to see why. It’s fresh and hearty, but still feels light and satisfying.


It’s the kind of salad you’ll want to eat when the weather’s warm and you want something that feels a little fancy without being fussy. It has chopped greens, roasted chicken, bacon, beets, egg, and cheese, all tossed with a really simple vinaigrette. It’s great for dinner, brunch, or meal prepping for the week ahead.

One of the best parts is how easy it is to make it your own. You can swap ingredients or prep it all ahead and toss it together when you’re ready. McCarthy Salad

Ingredients

Salad

  • 1/4 head iceberg lettuce shredded
  • 1/2 head romaine lettuce shredded
  • 1/2 cup grilled chicken
  • 1/2 cup diced and roasted red beets
  • 1/2 cup hard boiled egg
  • 1/2 cup diced cheddar cheese
  • 1/2 cup bacon
  • 1/4 cup diced tomato
  • 1/4 cup diced avocado

Dressing

  • 1 cup balsamic vinegar
  • 1 shallot
  • 1 Tbsp brown sugar
  • 1 tsp dijon mustard
  • salt & pepper
  • 2 Tsbp canola oil

Instructions

  • Cook bacon and boil your eggs. Cool and set aside.
  • Shred the lettuce in a food processor. You want really finely chopped lettuce for this.
  • Top the lettuce with the rest of the salad ingredients.
  • Combine all the dressing ingredients into a food processor or blender and emulsify.
  • Enjoy!
