Lasagna Soup Recipe

Have you seen the viral lasagna soup recipes on your social media pages?  I can’t scroll without seeing a reel or tiktok about lasagna soup!

I decided to try my hand at one of the recipes that came across my feed.  I picked up all my ingredients at Trader Joe’s and got to work.  It took less than 30 minutes to whip up, and was a hit with my family.

Lasagna is one of those meals everyone loves… but not everyone has the time (or energy) to make on a regular weeknight. That’s where this lasagna soup comes in. It has all the cozy, familiar flavors of classic lasagna without the layering, baking, or dishes. It has rich tomato broth, hearty meat, tender pasta, and melty cheese.

This is the kind of meal that feels comforting and filling, but still doable on a busy day. It’s forgiving, easy to adapt, and even better the next day. Perfect for chilly evenings, feeding a family, or stocking the fridge with leftovers you’ll actually look forward to.

With a few adjustments to the recipe I found online, I am sharing it below.  This hearty, delicious dish is perfect for chilly evenings. Don’t forget to pick up a loaf of garlic bread to serve on the side!

Lasagna Soup

Ingredients

  • 1 yellow onion
  • 5 garlic cloves
  • 2 tbsp olive oil
  • 3 tsp salt
  • 2 tsp pepper
  • 2 tbsp oregano
  • 1 tbsp thyme
  • 1 tbsp coriander
  • 1 lb ground beef
  • 15 oz tomato sauce
  • 32 oz beef bone broth
  • 1 bag pasta
  • 1/3 cup cream
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 3 tbsp ricotta cheese

Instructions

  • Dice onion & mince garlic
  • Heat 2 tbsp olive oil in large pot over medium heat. Add onions and garlic. Saute until translucent. Season with salt & pepper, oregano, thyme, and coriander.
  • Add 1lb ground beef and cook until browned (about 7-8 minutes).
  • Stir in tomato sauce and bone broth. Cover and simmer for 8 minutes.
  • Add pasta of choice and cook per package instructions.
  • 2 minutes before pasta is done, stir in cream and all cheeses until blended.
  • Serve topped with extra cheese.
