Rocky Road No-Bake Bars

 

There is nothing like a homemade treat.  No matter what age you are, discovering a plate of fresh cookies, bars or cupcakes on your kitchen counter is truly the best.  I have always offered desserts in my home as an expression of love and to my family.  I suppose it might sound strange to relate desserts and love but I’ve always felt like homemade treats were filled with it.  Something made from scratch, with my hands to share with others to enjoy.   

I believe desserts don’t need to be time consuming or difficult, or require much skill at all.  I have built a business centered around delicious, beautiful desserts without any formal training or schooling.  It was started in the kitchen of my first home, with a baby on my hip, creating something that would bring joy and delight to my family.  A simple sugar cookie that would evolve into an entire brand over the course of a decade.  

As we maneuver through this difficult year, I’ve discovered how much joy baking has brought to people.  I host a Facebook Live each Monday with an audience that spans across the entire globe.  In March, I shifted the concept of the live to be a “bake-along”, where everyone watching would have the opportunity to gather the necessary ingredients and bake along with me as I demonstrated how to create the recipe.  Each week I share the ingredient list (simple items easy to source at your local supermarket) a few days in advance giving everyone a chance to source what they need.  Then at 6:30pm PST, we gather together over Facebook to make treats together.  

 

It’s been heartwarming to read comments of families baking together, children gathered in the kitchen and friends tuning in from their own homes to join our “baking party”.  It’s created a bit of an escape from a world that can be frightening, and provided something for people to look forward to each week.  It’s stretched my own creativity because I’ve had to think of simple treats we can make quickly, inexpensively, with easy-to-source ingredients and zero to little skill level.   

 

I’m excited to share a new recipe here, first, to my blog audience: Rocky Road No-Bake Bars!  It’s a great go-to summer recipe, no-oven required and simple enough for small children to make!  The combination of chocolate, marshmallows, and nuts combined with the crunchiness of rice cereal makes this treat rich and delicious.  I use Karo® Corn Syrup to bind the ingredients together which also adds the perfect amount of sweetness and provide a delicious, chewy texture. I hope this recipe is something you can make for family or with family and bring you both joy and delight.

 

 

Rocky Road No-Bake Bars

These are great go-to summer bars, no-oven required and simple enough for small children to make!  The combination of chocolate, marshmallows, and nuts combined with the crunchiness of rice cereal makes this treat rich and delicious.  I use Karo® Corn Syrup to bind the ingredients together which also adds the perfect amount of sweetness and provide a delicious, chewy texture.

Equipment

  • saucepan
  • 8x8 cake pan

Ingredients

  • 1/4 cup Karo® Corn Syrup
  • 1/4 cup butter
  • 2 cups semi-sweet chocolate chips
  • 3 cups rice crispy cereal
  • 1/2 cup chopped walnuts
  • 1 cup mini marshmallows

Instructions

  • Combine Karo® Corn Syrup, butter and chocolate
  • Add to saucepan over low heat, until melted and smooth.  You can also microwave these ingredients in a microwave safe bowl in 45 second increments until smooth.
  • Remove from heat and stir in walnuts, marshmallows and cereal until combined.
  • Press into greased 8x8 square pan.
  • Refrigerate about 30 minutes or until set.
  • Cut into bars and store at room temperature.

I added my Rocky Road No-Bake Bars to this board filled with s'mores ingredients, fresh fruit and sweet dips for the ultimate summer indulgence.  Whether you're gathered around a camp fire or cuddled up for movie night, a dessert board is sure to be a hit with friends and family.  

 

 

These yummy squares are a great size for packaging up and sharing with neighbors and also the perfect size to add to  treat boards for summer guests. I love to put together a grouping of goodies for guests to snack on.  The combination of fruits, dips and desserts is always a hit and hard to resist!
