1. Make the English Toffee

Start by preparing your homemade English toffee and letting it cool completely.

Once it has hardened, break or crush the toffee into bite-size pieces. Set them aside while you make the cereal treats.

2. Brown the Butter

Add the butter to a large pot and melt over medium heat.

Continue cooking, stirring frequently. The butter will begin to bubble and foam before the milk solids at the bottom start turning golden brown.

Once the butter smells toasted and nutty and you can see those golden-brown specks, it’s ready.

3. Melt the Marshmallows

Add the marshmallows to the browned butter and stir until they’re melted and smooth.

Don’t overcook the marshmallows. As soon as everything is melted together, you’re ready for the cereal.

4. Add the Cereal

Remove the pot from the heat and gently fold in the crispy rice cereal until everything is evenly coated in the brown butter marshmallow mixture.

5. Fold in the Toffee

Let the mixture cool very slightly before folding in your crushed English toffee.

You want those delicious pieces distributed throughout the bars rather than completely melting into the marshmallow mixture.

6. Press Into the Pan

Don’t burn the brown butter. Once you start seeing golden flecks and smelling that toasted, nutty aroma, you’re there.

Have everything ready before you begin. Rice Krispie treats come together quickly once the marshmallows melt, so measure your cereal and crush your toffee ahead of time.

Don’t overcook the marshmallows. Melt them just until smooth.

Don’t crush the toffee too finely. You want some noticeable crunchy pieces throughout the bars.

Don’t press too firmly. Gently press the mixture into the pan rather than packing it down.

Save some toffee for the top. It makes the finished bars look extra delicious and lets everyone know exactly what’s hiding inside.

  • 2 10 ounce bags mini marshmallows, divided
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt
  • 7 cups crispy rice cereal
  • 1 cup roughly chopped homemade English toffee plus more for topping

For the Cinnamon Sugar

Instructions

  • Line a small baking sheet or plate with parchment paper.
  • Add the butter, sugar, water and salt to a small heavy-bottomed saucepan.
  • Cook over medium heat, stirring as the butter melts and the ingredients combine.
  • Continue cooking until the mixture reaches 300°F on a candy thermometer and turns a deep golden amber color.
  • Remove from the heat and carefully stir in the vanilla.
  • Immediately pour the hot toffee onto the parchment and spread it into a thin layer.
  • Let cool completely until hard, about 20–30 minutes.
  • Break the toffee into pieces, then roughly chop it. You want a combination of little bits and larger chunks.
  • Make the Brown Butter Rice Krispie Treats
  • Line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal. Lightly grease the parchment.
  • Add the butter to a large, light-colored pot or saucepan over medium heat.
  • Melt the butter, then continue cooking while stirring frequently. It will foam and bubble before the milk solids begin turning golden brown. Once you see deep golden specks at the bottom and the butter smells toasted and nutty, remove it from the heat.
  • Immediately add about 18 ounces of the mini marshmallows, reserving approximately 2 ounces for later. Stir until completely melted and smooth. If necessary, return the pot to low heat briefly to finish melting them.
  • Stir in the vanilla and salt.
  • Add the crispy rice cereal and gently fold until evenly coated.
  • Let the mixture cool for a minute or two, then fold in 1 cup chopped English toffee and the reserved mini marshmallows. Don’t overmix—you want pockets of marshmallow and noticeable pieces of toffee throughout.
  • Transfer the mixture to the prepared 8×8-inch pan. Using lightly buttered hands or a piece of parchment paper, gently press the mixture into an even layer. Don’t compact it too firmly or the treats will lose their soft, gooey texture.
  • Sprinkle additional chopped English toffee over the top, gently pressing the pieces into the surface.

Notes

Don’t overcook the marshmallows. Once they’re melted, move quickly. Cooking them too long can make the finished treats hard instead of soft and chewy.
Keep the toffee chunky. Some little crumbs are great, but leave plenty of pea- to dime-size pieces so you get visible pockets of English toffee when you cut into the treats.
Let the mixture cool slightly before adding the toffee. If it’s screaming hot, more of the toffee will melt into the marshmallow mixture instead of staying crunchy.
Don’t pack the pan. Gently pressing the mixture into place is one of the biggest tricks to getting those tall, soft bakery-style cubes.
For extra-pretty tops: Reserve your nicest pieces of toffee and scatter them over the cinnamon sugar after pressing the treats into the pan.

Cut Into Bakery-Style Cubes

Use the parchment paper to lift the entire slab from the pan.

For those big, impressive squares, measure and cut the slab into a 4 x 4 grid, creating 16 approximately 2 x 2-inch treats.

Use a large, sharp knife and wipe it clean between cuts for crisp edges.
