If a classic Rice Krispie treat and a peanut butter cup had a baby, this would be it.

These chocolate peanut butter crispy cubes are rich, gooey, salty-sweet, and somehow still have protein mixed in without tasting like a “protein recipe.”

The combination of brown butter, melted marshmallows, creamy peanut butter, and Cocoa Krispies creates the kind of treat that disappears almost immediately in our house.

I added BetterDays chocolate protein powder for a little extra staying power, but the texture still stays soft and chewy instead of dry and dense.

Ingredients

  • 1/2 cup butter browned
  • 1 16 oz bag mini marshmallows
  • 1/3 cup creamy peanut butter
  • 1/2 cup BetterDays Chocolate Protein
  • 1 tsp vanilla extract
  • 5 cups Cocoa Krispies
  • Optional:
  • melted chocolate drizzle
  • melted peanut butter drizzle

Instructions

  • Step 1: Brown the butter
  • Melt butter over medium heat until golden brown with nutty brown flecks.
  • Step 2: Melt marshmallows
  • Reduce heat to low and stir in marshmallows until smooth.
  • Step 3: Add protein
  • Remove from heat briefly, then whisk in protein powder, vanilla, and almond extract.
  • Step 4: Mix
  • Fold in crispy rice cereal and sprinkles.
  • Step 5: Press into pan
  • Press gently into parchment-lined 8×8 pan.
  • Step 6: Finish
  • Top with extra sprinkles and flaky salt.
  • Cool before slicing into cubes.
