Easy Vanilla Bean Maple Granola (Healthy Homemade Recipe)
There’s something about homemade granola that feels extra cozy. I love having a big jar of it on the counter. It makes an easy breakfast, a snack to grab by the handful, or the perfect crunchy topping for yogurt or smoothie bowls. Plus, when it bakes, the whole house smells incredible.
This version has a mix of oats, nuts, and seeds, all lightly sweetened with maple syrup and flavored with vanilla bean paste. It’s wholesome, crunchy, and so simple to make.

Vanilla Bean Maple Granola
Ingredients
- 2 cups old-fashioned rolled oats
- 1 cup raw almonds
- 1 cup raw walnuts
- 1/2 cup sunflower seeds
- 2 tbsp ground flaxseed
- 2 tbsp chia seeds
- 1/2 tsp salt
- 2 tsp vanilla bean paste
- 1/3 cup pure maple syrup
- 1/3 cup coconut oil
Instructions
- Preheat your oven to 325°F and line a baking sheet with parchment paper.
- In a food processor, pulse together the almonds, walnuts, and sunflower seeds until they’re coarsely chopped.
- Transfer the chopped mixture to a large bowl and stir in the oats, flaxseed, chia seeds, and salt.
- Add vanilla bean paste, maple syrup, and melted coconut oil. Mix well until everything is coated.
- Spread the granola evenly onto the prepared baking sheet, pressing it down a little to help form clusters.
- Bake for about 25 minutes, or until golden.
- Let it cool completely, then break into chunks and enjoy!
serving Ideas:
- Sprinkle over a bowl of vanilla yogurt and fresh berries.
- Pack in little bags or jars for easy grab-and-go snacks.
- Layer into a parfait with seasonal fruit.
- Or simply eat by the handful straight off the pan (my personal favorite!).

This granola keeps in an airtight container for about a week, but in my house, it rarely lasts that long.
