4th of July Ice Cream Cake Cups

Don’t forget dessert this 4th of July! Red, white and blue ice cream cake cups are the perfect treat to beat the heat this holiday weekend.  These patriotic cups of dessert are simple to make with just a few ingredients, and easy to make ahead of time and freeze until serving.  

Ingredients:

White cake cubes (baked boxed mix or your favorite recipe)

Sliced strawberries

Blueberries

Vanilla Bean Ice Cream

Buttercream Icing (my recipe HERE)

Supplies:

Plastic Cups & Lids

Cookie Scoop

Start by layering white cake cubes into the base of the cup.  

Add a layer of sliced strawberries and blueberries. 

 

Top berries with a scoop of vanilla ice cream.  

Repeat steps with more white cake and berries.  Be sure to press layers down to allow more dessert to fit into the cups!

Top with a scoop of buttercream icing and more berries.  Secure shut with a dome lid and store in the freezer until ready to serve.  Pull cake cups out of freezer 10 minutes prior to serving.
