DAD Cookie Cake

Father’s Day is just around the corner!  What better way to celebrate the Dad in your life than with a giant cookie cake.  Cookie Cakes continue to be a best seller for us at Jenny Cookies Bake Shop so for those who aren’t local and want to make something special for dad, I’m sharing how to make a giant DAD Cookie Cake with some of my must-have baking products from JoAnn Fabric and Craft Store.

You will need:
Cookie Sheet
Printed cut out of letters D and A
Sugar Cookie Dough (use your favorite recipe or get mine HERE)
Wilton Decorating Icing or my favorite recipe HERE
Piping Bag
Wilton extra large round decorating tip
Toppings: gumballs, sixlets, sprinkles, miniature sugar cookies, gummy bears, cracker jacks, licorice and other small candies.
Cake Board 

Directions:

First, you’ll want to start with your favorite cookie dough.  I use my signature recipe (HERE) or you can use your favorite.

 

First, roll out your dough on a floured surface.

 

Cut large printed letters out of dough with a paring knife.  You’ll need to cut (4) D’s and (2) A’s.

 

Carefully move dough letters to baking sheet.   Bake according to your recipe. (My recipe calls for 8-9 minutes at 375 F).

Fill piping bag with white icing, fitted with a large round tip.

Holding your piping bag vertically, make dots of icing around one of each letter.  Try to make the same size dot for even stacking.

 

When entire surface is covered, carefully place second letter on top of the first letter.  Do not push top cookie down, gently set on top.

 

Repeat buttercream dots on top layer.

 

 

Once your cookie cake is covered in buttercream dollops, you can begin the fun part: decorating!

 

The great part about this cookie cake is that you can personalize it to whatever dad’s favorites are.  Mine was a baseball theme so I added a few touches of green buttercream “grass” to set my mini baseball cookies into.

 

 

I added cracker jacks, little lollipops, chocolate bark and mini rice krispy treat pieces.  Using a variety of different sized items creates great balance and makes your cookie cake unique!

For the finishing touch, I sprinkled the entire cake with rainbow non-pareils and then carefully placed the cake onto a cake board for serving.
