Mother’s Day Rice Krispy Cake with Tori Spelling

 

I recently spent the afternoon in the kitchen with my friend Tori. She’s always up for making something crafty and loves when we can create something that involves the kids!

With Mother’s Day just a few days away, we created a giant MOM Rice Krispy Cake inspired by our popular Cookie Letter Cakes!

They’re super easy to make and fun for kids to join in.  We gathered as many colorful candies and sprinkles we could find, to use later as our decorations.

 

We made classic Rice Krispy Treats but instead of cutting them into squares, we cut out the letters M-O-M, times two, so we could fill and stack each letter with buttercream.

 

 

We used pink buttercream to cover the first set of letters with a pastry bag fitted with a large round tip.

 

After the first layer was complete, we topped each letter with it’s coordinating letter and repeated with a second layer of buttercream.

We covered the entire surface with rock candies, sprinkles, candy melts, gummy bears, pez, nerds, you name it, it was on the cake!

 

Even baby Beau got in on the action!

 

Tori, Finn and I each completed a letter.  While we decorated we talked about how fun it would be to recreate this project for a kids birthday party!

Tori gave me an opportunity several years ago to make desserts for one of her parties and I’ve always been grateful for the experience.  We continued to create amazing parties, projects and dessert tables together over the years but it’s been awhile since we’ve been able to get together.  It was so great to catch up and make something fun!

Here’s how YOU can replicate this fun rice krispy project!

Rice Krispy Letter Cake

Ingredients:
3 tablespoons butter
4 cups marshmallows
6 cups rice cereal

Directions*:
*I tripled this recipe to have enough Rice Krispy Treats to make enough letters to spell MOM*

1. In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Microwave cooking times may vary.

2. Add cereal. Stir until well coated.

3. Using buttered spatula or wax paper evenly press mixture into jelly roll pan (cookie sheet with lip around side). Flatten mixture with a spatula coated with cooking spray. Cool.

4. Cut desired letters out of cooled Rice Krispy Treats. Cover letter in dots of buttercream icing and top with second letter. Cover second layer in dots of buttercream icing. Decorate top of letter cake with assorted candies.
