Cranberry Pomegranate Walnut Pie

Ingredients

  • 1 - 9 inch prepared pie shell recipe below
  • 1 1/2 c. brown sugar
  • 1/4 c. butter melted
  • 1 1/4 c. Karo light corn syrup
  • 2 tsp. vanilla
  • 5 eggs slightly beaten
  • 1 1/2 c. chopped walnuts
  • 1 c. fresh cranberries
  • 2/3 c. pomegranate seeds

Instructions

  • Preheat oven to 350 degrees
  • In a large bowl, combine brown sugar, butter, corn syrup, vanilla, and eggs. Whisk until well-combined.
  • Fold in walnuts, cranberries, and pomegranate seeds.
  • Pour into 9-inch unbaked pie shell.
  • Bake at 350 degrees for 75-85 minutes. The center will still be slightly jiggly, but the edges will be set and golden brown.
  • Let cool for 3 hours before serving.
