Pacific Northwest Berry Pie


  • 2 prepared unbaked pie crusts see below
  • 5-6 cups of fresh mixed berries Blueberry, Blackberry, Raspberry, Strawberry
  • Zest and juice of 1 lemon
  • 1.5 tsp. Vanilla Extract
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup cornstarch
  • Pinch of salt
  • 1/4 tsp. ground ginger


  • Preheat oven to 375 degrees
  • In a large bowl toss berries with zest, lemon juice and vanilla extract. Toss in sugars, cornstarch, salt, and ginger. Make sure all berries are coated and cornstarch disappears.
  • Fill the pie crust with the berry mixture making sure to pile up high in the center.
  • Top crust in whatever decorative pattern of your choice
  • Place pie dish on a baking sheet and bake for 60 minutes or until the crust is golden brown and the filling is bubbly.
  • Let pie cool for at least 3 hours before serving. Serve with a side of vanilla bean ice cream!
