Instead of piping buttercream onto my signature sugar cookies, you'll only have to cut out the cookies. Get my recipe HERE. I picked up a scalloped cookie cutter at JOANN and a few other inexpensive supplies. You can make your cookie sandwiches any size you like, just be sure to cut out two for each sandwich!
I went with a smaller size, about 2". Using mini alphabet cookie cutters, I cut out stars and letters to spell out "Party Like its 1776". You could cut out any patriotic greeting or keep it traditional with stars.
Bake for about 5-6 minutes or until outer edges are beginning to brown. Transfer from cookie sheet to a cooling rack and allow to cool 15-20 minutes.
While you are waiting for the cookies to cool, fill disposable decorating bags with jam. I used raspberry and blueberry to make the dessert red and blue! No need for a coupler, just snip the tip of the decorating bag about 1/4 inch.
When the cookies are completely cooled, lay cookies without letters or star cut outs flat. Set other cookies aside. Give each plain cookie a dollop of jam.
Using an angled spatula, swipe jam around over the cookie. Doesn't have to be perfect, just enough to cover most of the surface.
Place cookies with cut outs and letters on the tops of the jam covered cookies to create a linzer-like sandwich cookie.
Complete the cookies by dusting with powdered sugar, giving them the complete red, white and blue look!
