One of my family's favorite fall dinners is Taco Soup. It's the easiest recipe and always a crowd pleaser.
Ingredients
1/2chopped onion
1tbspoil
1cancorn
1lbground beef or ground turkey
1canpinto beans
1canblack beans
2cansdiced tomatoes
1pkgtaco seasoning
salt & pepper to taste
Optional Garnish:
cilantro
sour cream
shredded cheddar cheese
avocado
tortilla chips
Instructions
In a large pot over medium heat, warm the oil. Add onion and cook until soft, about 5 minutes. Add ground beef or turkey and cook until no longer pink.
Add beans, corn, diced tomatoes, and taco seasoning. Don't drain the cans, add the liquid! Bring to a simmer and cook until all ingredients are heated through.
Garnish with sour cream, shredded cheddar cheese, avocado slices and cilantro. Serve with tortilla chips.
Notes
Bonus idea: Add everything but the garnishes to a crockpot. Cook for 4-6 hours and then enjoy!
