Taco Soup

One of my family's favorite fall dinners is Taco Soup.  It's the easiest recipe and always a crowd pleaser.  

Ingredients

  • 1/2 chopped onion
  • 1 tbsp oil
  • 1 can corn
  • 1 lb ground beef or ground turkey
  • 1 can pinto beans
  • 1 can black beans
  • 2 cans diced tomatoes
  • 1 pkg taco seasoning
  • salt & pepper to taste

Optional Garnish:

  • cilantro
  • sour cream
  • shredded cheddar cheese
  • avocado
  • tortilla chips

Instructions

  • In a large pot over medium heat, warm the oil. Add onion and cook until soft, about 5 minutes.  Add ground beef or turkey and cook until no longer pink.
  • Add beans, corn, diced tomatoes, and taco seasoning.  Don't drain the cans, add the liquid!  Bring to a simmer and cook until all ingredients are heated through.
  • Garnish with sour cream, shredded cheddar cheese, avocado slices and cilantro.  Serve with tortilla chips.

Notes

Bonus idea: Add everything but the garnishes to a crockpot.  Cook for 4-6 hours and then enjoy!
