Ingredients

  • 5 cups beef bone broth
  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small yellow onion diced
  • 2 celery stalks diced
  • 2 carrots sliced
  • 1 small zucchini chopped
  • 1 small gold potato diced
  • 3 cloves garlic minced
  • 1 tbsp tomato paste
  • 1/2 tsp salt plus more to taste
  • 1/4 tsp black pepper plus more to taste
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1-2 tsp fresh lemon juice optional
  • parsley for garnish optional

Instructions

  • Sauté the aromatics
  • Heat olive oil in a large soup pot over medium heat. Add the diced onion and celery and cook for about 4 minutes until softened and fragrant.
  • Add the ground turkey and cook until browned, breaking it apart as it cooks (about 5–6 minutes).
  • Stir in the garlic and tomato paste and cook for 1 minute to deepen the flavor.
  • Add carrots, zucchini, and diced potato. Cook for 1–2 minutes.
  • Pour in the beef bone broth and add salt, pepper, paprika, and Italian seasoning.
  • Simmer
  • Bring to a gentle boil, then reduce heat and simmer for 20–25 minutes until the vegetables are tender.
  • Taste the soup and add additional salt and pepper as needed. I ended up adding a little more at the end to really bring out the flavor.
  • Stir in lemon juice if using and garnish with parsley before serving.

Tips for the Best Ground Turkey Soup

Cook the tomato paste
Letting it cook for a minute removes the raw taste and adds depth.

Use beef bone broth
This gives the soup a richer, more developed flavor.

Don’t skip the onion and celery
They create the base that makes this taste like homemade soup.

Finish with lemon
A small squeeze brightens everything and balances the richness.

Variations

  • Swap the potato for sweet potato
  • Add rice or quinoa for a heartier soup
  • Stir in spinach or kale at the end
  • Use ground beef instead of turkey for a richer version

Notes

Adjust salt and pepper at the end
This step makes a big difference. Bone broth and ground turkey can vary, so taste and season before serving. I added a little more salt and pepper at the end to really bring out the flavor.

Even better the next day
This is one of those soups that tastes even better the next day. The flavors deepen as it sits, making it perfect for leftovers or meal prep.
