Lucky Charms Rice Krispie Treats (The Easiest St. Patrick’s Day Dessert)
There are some holidays that feel like they need a complicated dessert.
St. Patrick’s Day is not one of them.
This is the holiday for bright colors, cozy kitchens, kids pulling marshmallows out of the bowl, and a treat you can make in under 20 minutes while dinner cooks. These Lucky Charms rice krispie treats are soft, gooey, a little nostalgic, and honestly hard to mess up.
They’re perfect for class parties, after school snacks, or a last minute “oh right, tomorrow is St. Patrick’s Day” situation.

Lucky Charms Rice Krispie Treats
Ingredients
- 10 oz bag mini marshmallows (I like to keep a few extra aside to stir in at the end)
- 6 tablespoons salted butter
- 3 cups rice cereal
- 3 cups Lucky Charms cereal
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Optional:
- White chocolate drizzle
- Extra marshmallows mixed in
- Green sprinkles
Instructions
- Line a 9×13 pan with parchment paper or lightly grease it.
- In a large pot, melt the butter over low heat.
- Add the marshmallows and stir slowly until melted.
- Do not rush this part. High heat makes hard treats later.
- Once smooth, remove from heat and stir in vanilla and a pinch of salt.
- Pour in the cereals and gently fold until coated.
- Tip: reserve about 1/2 cup cereal and mix it in last so you keep some fully intact marshmallows for texture and color.
- Transfer mixture to the prepared pan.
- Lightly butter your hands or the back of a spatula and gently press down.
- Do not pack tightly — soft pressing = soft treats.
- Let sit about 30–40 minutes before slicing.
- For clean cuts, use a sharp knife lightly greased with butter.

Overheated marshmallows = stiff bars
Don’t compress them
Press just enough to hold shape
Salt helps the flavor
Even in sweet recipes it makes a difference
Cut when fully cooled
Warm treats fall apart
Make Ahead & Storage
Store covered at room temperature up to 3 days.
Avoid refrigerating, it makes them hard.
If they firm up slightly, microwave a piece for 8–10 seconds and they’re soft again.
You don’t need an elaborate dessert to make a holiday feel special.
