Back-to-School Brain Break Board!

We made it to back-to-school!  If you’re a parent with a school-aged child, I’m sure you’ve had to make a difficult decision in regards to school this year.  Homeschool, Virtual, Remote, In-person socially-distanced… no right answer.  We’ve all just tried to make a decision that was best for our family and make the best of it, right?! 

Like many of you, my kids are learning from home this year.  We are working towards a routine and getting into the swing of this whole homeschool thing.  The old structure of breakfast before school, packing lunches and mid-day snacks are no longer a thing so I thought it would be fun to create a Brain Break Board for the kids to split up the monotony of sitting in front of a computer, in their rooms or at the kitchen table.  

What’s a Brain Break Board?!  Whatever you want it to be!  Imagine sitting at your desk all day and someone surprising you with a board of goodies to snack on while working.  I know it would put a little pep in my day and revive my attention span.  Kids need brain breaks throughout the day and what better way than with a board filled with yummy snacks?  

For my kids, I filled it with yummy granola bars, yogurt parfaits and fresh fruit.  I found the cutest wood tray at JOANN, along with the little mason jars I used for the yogurt and several other fun ingredients pictured below to make homemade granola bars (AKA Brain Break Bars) delicious AND cute! 

Brain Break Bars

Ingredients: 

1/4 cup butter

1/4 cup honey

1/3 cup brown sugar

2 cups quick oats

1 cup crispy rice cereal

1/2 teaspoon vanilla

2 tablespoons magical chocolate chips

Optional: Candy Melts (optional for drizzle topping)

 

Supplies: 

Sprinkles

Spatula

Brownie Pan

Saucepan

Parchment Paper

 

  1.  Combine oats and cereal in large bowl.  

2. In a saucepan over medium heat, combine butter, honey and brown sugar until bubbling.  Turn heat to med-low and cook two minutes. 

3. Turn off heat and stir in vanilla.  

4.  Pour dry ingredient mixture into butter and sugar mixture.  Stir to combine. 

 

5.  Stir in sprinkles and chocolate chips!  

 

6.  Once combined, pour batter into a lightly greased small brownie sized pan or pan lined with parchment.  Spread and pat mixture down with a silicone spatula until flat.  

 

 

7.  Allow one hour to cool, or pop into fridge to set up about 30 minutes.  

8.  Once bars have set up, cut into strips or squares.  

 

In addition to the bars, I added a couple of berry bowls, and yogurt parfaits.  If your kids are in school, the Brain Break Board is also fun to put together for an after school study snack.  The bars can be made for lunchbox treats or even a fun party snack!  Mix up the sprinkles and chocolate chips to create your own varieties of bars.  JOANN has a bazillion fun sprinkle options!  

I made a few extra bars to package up for the kids to share with some classmates in the neighborhood.  Any homemade treat looks extra special when packaged in a bakery box and tied up with ribbon!
