Homemade Tunacado Sandwich (Joe & The Juice Inspired)

On a recent trip to the new Joe & The Juice in U Village, Ally and I tried their famous Tunacado sandwich and now we get why everyone raves about it. It’s fresh, creamy, and packed with flavor. We loved it so much we came home and made our own version.  It’s so simple to recreate!  

If you’re a tuna lover (or just love a good sandwich), you’re going to want to save this one! And if tuna isn’t your thing, you can sub canned chicken, it works perfectly too.

Homemade Tunacado Sandwich (Joe & The Juice Inspired)

Ingredients

For the Tuna or Chicken Mousse

  • 6 oz canned tuna, drained (or canned chicken, drained)
  • 3 tbsp mayo
  • 1 tsp Dijon mustard
  • Juice of ½ lemon
  • Salt + pepper (to taste)

For the Sandwich

  • 2 slices of bread (we used sourdough)
  • 1 tbsp pesto
  • 1 tomato, thinly sliced
  • ½ – 1 avocado, sliced

Instructions

Make the mousse.

  • Add the tuna (or chicken), mayo, Dijon, lemon juice, salt, and pepper to a bowl. Use a fork to mash and combine until smooth and creamy. Set aside.
  • Toast your bread.
  • Don’t skip this part! Thoroughly toasting the bread gives the sandwich that signature crunch.

Assemble the Sandwich

  • Spread the mousse mixture on one slice of bread. On the other slice, spread the pesto. Layer on tomato slices and avocado, then close the sandwich.
  • Slice it in half and dig in. It’s fresh, filling, and just as good (maybe better!) than the one we had at Joe & The Juice.
