PB Cracker Cookies
If you love that perfect balance of sweet, salty, and crunchy, you’re going to be obsessed with these PB Cracker Cookies. They’re ridiculously simple to make, no baking required, and every time I bring them somewhere, I get asked for the recipe. Spoiler: It’s barely even a recipe!
Step 1: gather your ingredients
These little bites are made with buttery Ritz crackers, creamy peanut butter, and melted chocolate. That’s it! But somehow, they taste like something way fancier.
what you’ll need:
-Ritz Crackers
-Smooth Peanut Butter
-Melting Chocolate (white or milk)
-Optional: Sprinkles, flaky sea salt, or a drizzle of chocolate for extra flair

step 2: assemble your crackers
Spread a good layer of peanut butter on one Ritz cracker, then top it with another cracker to make a little sandwich. Press gently so it holds together.




step 3: Melt your chocolate and dip your sandwiches
Use a microwave or double boiler to melt your chocolate until smooth. If using the microwave, heat in 20-30 second intervals, stirring in between to avoid burning. Using a fork or dipping tool, dunk each PB cracker sandwich into the melted chocolate. Let the excess drip off before placing it on a parchment-lined baking sheet.



step 4: add your toppings
Before the chocolate sets, sprinkle on a little flaky salt, sprinkles, or whatever you love. I went with my favorite Spring colored sprinkles for this batch.



step 5: let them set up
Pop the tray in the fridge or freezer for about 15 minutes until the chocolate hardens. It’s hard to wait, I know!
These PB Cracker Cookies are perfect for parties, gifting, or just snacking when that sweet-salty craving hits. They’re dangerously easy to make, which means you’ll probably find yourself whipping up another batch sooner than expected.
pro tips:
- If your peanut butter is super runny, chill the sandwiches for 10 minutes before dipping them in chocolate.
- Want an extra crunch? Use crunchy peanut butter or mix in crushed pretzels.
- Store them in an airtight container in the fridge for a firmer bite, or at room temp if you like them a little softer.
