How to Make Sugar Cookie Pies

‘Tis the season for PIE!  Today I’m sharing my favorite way to eat pie…as a cookie!  These simple buttercream sugar cookie pies are quick to make and will be the hit of your Thanksgiving tablescape.

 

They are great for any holiday dessert table or adorable packaged up to give as little gifts.  Swing by JOANN for a few quick supplies and you’ll be ready to bake!

You will need: 

Wilton 104 decorating tip

(2) Wilton 4 decorating tips

Wilton 18 decorating tip 

couplers 

disposable decorating bags

round cookie cutter

red buttercream icing

orange buttercream icing

white buttercream icing

brown buttercream icing

dark ivory buttercream icing

 

Thanksgiving Pie Sugar Cookies 

You’ll want to start with your favorite sugar cookie and icing recipe.  If you are in a rush, a package of pre-made sugar cookie dough from the store works great, or if you have the time, use my signature sugar cookie & icing recipe HERE.  

After your cookies are baked and cooled, use the decorating steps below to create miniature sugar cookie pies!


Chocolate Sugar Cookie Pie directions:

Fit a pastry bag with a #4 decorating tips and fill with brown buttercream icing.  Fit second pastry bag with a #104 tip and fill with ivory buttercream icing.  Fit third pastry bag with a #18 tip and fill with white icing.  Using the brown icing, draw an outline around the outer edge of the cookies, sparing 1/4 inch space around the edge.  Fill in the area using a back and forth horizontal motion until outlined surface is covered.  Using the ivory buttercream icing, and holding the bag vertically with the larger side of the tip closest to the cookie, draw a ruffle onto the cookie to resemble pie crust.  Complete cookie using the white icing and holding the bag vertically, use a circular motion and draw a dollop of whipped cream.

 

 

Pumpkin Sugar Cookie Pie directions:

Fit a pastry bag with a #4 decorating tips and fill with orange buttercream icing.  Fit second pastry bag with a #104 tip and fill with ivory buttercream icing.  Fit third pastry bag with a #18 tip and fill with white icing.  Using the orange icing, draw an outline around the outer edge of the cookies, sparing 1/4 inch space around the edge.  Fill in the area using a back and forth horizontal motion until outlined surface is covered.  Using the ivory buttercream icing, and holding the bag vertically with the larger side of the tip closest to the cookie, draw a ruffle onto the cookie to resemble pie crust.  Using the white icing and holding the bag vertically, use a circular motion and draw a dollop of whipped cream.  Finish decorating by sprinkling a small amount of cinnamon onto the cookie.

 

 

Berry Sugar Cookie Pie directions:

Fit pastry bag with #104 tip and fill with ivory buttercream icing.  Fit pastry bag with #4 tip and fill with red buttercream icing.  Using the red icing, draw a round outline around the outer edge of the cookies, sparing 1/4 inch space around the edge.  Fill in the area by drawing round berries holding the bag vertically and making a circular motion until outlined surface is covered.  Using the ivory icing, and holding the bag vertically with the larger side of the tip closest to the cookie, draw a buttercream lattice crust across the top of the buttercream berries.  Finish cookie by drawing a ruffle onto the cookie to resemble pie crust.

  1. Hello,

    The cookies are lovely! I have already pre-ordered your book. 🙂 I have a question, in the above you mention that you need “(2) Wilton 4 decorating tips”, but when I looked at the instructions I noticed that you actually used the 4 decorating tip 3 times (for brown, orange and red frosting). Can you tell me do you switch out one of the tips for one of the colors or should you use “(3) Wilton 4 decorating tips” instead?

    Are there tips that are handy to buy in duplicate because you use them a lot more often (for instance so that you can fill your pastry bags with all colors and then just decorate without stopping)? It would be handy to know which ones to buy more of.
